Roasted Sweet Potato Goat Cheese Dip

In the fall it seems like every recipe being shared on Facebook, Twitter and Pinterest all have to do with Pumpkins, however, the sweet potato is another wonderful fall vegetable that can be substituted and enjoyed in many dishes.  

Sweet potatoes have a lovely sweetness to them that goes well with the savoury taste of the goat cheese.  Not only is it just sweet to your taste buds but it's also good for your cardiovascular health!  This crunchy, starchy root vegetable is rich source of flavonoid anti-oxidants, vitamins and  minerals  and dietary fiber that are essential for optimal health.

Did you know that the Sweet Potato has the highest source of Vitamin A than any other root vegetable?  Not only that, but the sweet potato provides a good amount of vital minerals such as iron, calcium, magnesium, manganese, and potassium that are essential for enzyme, protein, and carbohydrate metabolism.   

So, go ahead and enjoy this tasty recipe!  You're doing a great thing for your body!

Ingredients

  • 3- 4 medium to large sized sweet potatoes (peel and cut into 2 inch cubes)
  • 1 tbsp of grapeseed oil, or walnut oil (other nut oils like macadamia are nice as well)
  • 1 - 2 cloves garlic (to your taste)
  • 8 ounces soft goat cheese 
  • Pinch of sea salt, celtic or pink himalayan salt (approx 1/2 tsp)

 Instructions:

Heat oven to 350 degrees Farenheit

Toss the sweet potatoes with grapeseed oil and place in a shallow baking dish. Bake until you can insert a fork, approximately 40 - 45 minutes, turning once halfway through. Allow to cool for about 20 - 30 minutes. 

Combine the sweet potatoes, peeled garlic cloves, goat cheese and salt and place in your food processor. Blend until smooth. If you only have a small food processor, blend in batches.

Serve with toasted pita or tortilla bites (recipe below)

 Toasted Tortilla Bites

Take 4 8' whole grain pitas or tortilla wraps and brush lightly with grapeseed oil. Sprinkle your favourite herbs such as cumin, oregano, rosemary, etc, over the pita.

Cut into pieces or triangles

Bake on parchment sheets in a 375 degree oven for approximately 10 minutes.   Cool and then serve with dip.
