Creamy Avocado Dressing
This creamy and healthy avocado salad dressing will definitely be a hit! It is so versatile and could also be used as a spread for sandwiches or burgers!
YIELD: about a cup

TOTAL TIME: 5 minutes
INGREDIENTS:
1 whole large avocado
1 clove garlic, peeled
1/2 tablespoon fresh lime or lemon juice
3 tablespoons olive oil or avocado oil
1/4 teaspoon kosher salt
1/4 teaspoon ground black pepper

DIRECTIONS:
In a mini food processor add the peeled clove of garlic, avocado, lime or lemon juice, olive oil, salt and pepper.
Process until smooth, stopping to scrape down the sides a few times. Thin the salad dressing out with a little bit of water (1/4 cup to 1/2 cup) until it reaches a desired consistency.
Keep in an airtight container for at least a week, but 3 to 4 days is best.
